Operation: Carrots

Operation: Carrots commits participating anchors UNM HSC, Presbyterian and APS to buying produce from local farmers, spurring demand while working to eliminate regulatory and cost-related barriers.

• UNM HSC plans to build a rooftop aquaponics garden at UNM Hospital and will develop procurement flexibility to buy salad bar items from local producers.
• Presbyterian is investing in the local food infrastructure to provide healthy, locally grown food to patients.
• APS is working to source food locally and in-state wherever availability and prices permit. It will also work with local growers to source foods for its summer nutrition program.
